History

Freshii was founded by Matthew Corrin in Toronto, in 2005. At the time, Matthew Corrin was working under fashion designer Oscar de la Renta when he became inspired by New York delis that offered fresh food. Originally called "Lettuce Eatery", the store opened to large queues and ran out of food on the first day before the end of lunch. Corrin's vision of fast, fresh food, custom-built, inspired Freshii's reputation for healthy, environmentally sustainable meals and snacks served quickly in a cool, clean setting for breakfast, lunch, dinner and snacks. In 2016, the company opened an average of 3.5 new stores per week and reached a total of 220 stores in 20 countries. Rapid expansion has also been seen in Latin America, with Colombia serving as the base of operations. As of 2015, Chile is the up-and-coming big expansion where Freshii hopes to open from 13 to 20 restaurants over the next decade. Restaurants have also been opening in Mexico, Guatemala, Costa Rica and Panama. The Latin American locations all feature the same core menu as Freshii outlets in North America and Europe, but also add several local or domestic ingredients.

In 2016, the chain introduced meal boxes at most locations which include breakfast, lunch, dinner, and two snacks. The boxes are available in plans ranging from 1 to 30 days and focus on healthy eating.

Concept

Freshii's mission is to help people of the world eat healthier, with food that is more convenient and affordable. The concept behind Freshii is to offer a customisable eating experience. Customers choose from a wide selection of chef-designed items, or create their own salad, wrap, bowl or soup with over 70 fresh ingredients and dressings. The choice is indicated via a paper receipt, known as a "Fast Ticket", presented to the cashier. The order is then "designed", with the desired toppings and dressings.

Patrons who do not wish to design their meals from scratch can choose a menu option with predetermined ingredients. These menu items are still customizable as ingredients can be substituted to the preference of the customer. For example, customers who make a menu choice are able to substitute a vegetable broth for chicken broth.

Philanthropy

Freshii is an active supporter of many local organizations where they have operating locations. Globally, Freshii is an active supporter of Free The Children and meals are donated to children in need when certain meals are purchased by customers.

Freshii values the environment as their Mission Green attempts to reduce the environmental impacts in every aspect of their business. Some initiatives include: using biodegradable or easily recyclable material in every item in the store, biodegradable packaging, energy efficient stores without energy-hungry appliances, and promoting the use of online or mobile ordering and paperless marketing.
