Pan fried rice cakes with sweet bean filling bukkumi


Bukkumi (hangul: 부꾸미) is a traditional Korean cuisine, made by kneading glutinous rice flour, flour, or sorghum flour and frying it on a griddle. Sometimes it contains a paste made of chestnuts, jujubes, azuki beans or so on. It is referred to as bukkumi, or heodeuretteok (hangul: 허드레떡) in Jeolla, bindaetteok (hangul: 빈대떡) in Seoul, jijimi (hangul: 지짐이) in Pyongan, and makbuchi (hangul: 막부치) in Hwanghae. Jeolla's flour bukkumi in particular is considered a delicacy during midsummer heat. Bindaetteok is slightly different from bukkumi in that bindaetteok is made using rarer ingredients like mung beans and meat, but bukkumi uses common ingredients like flour and vegetables.
