O-Tao (Thai: โอวต้าว, English: Small oyster omelet with taro) is the local cuisine of Phuket Province. The O-Tao is a delicacy made of flour and taro, added with small oysters, shrimp, bits of pork cracking and spring onions. It is best taken with a sweet and spicy sauce that further enhances the flavor and famous in serving with side dishes that is bean sprouts.

Ingredients

  • Tapioca flour 6 tbsp.
  • Rice flour 2 tbsp.
  • Water 1/2 cup
  • Small oysters 2/3 cups
  • Eggs 3
  • Taro 1 bulb
  • Salt 1/2 tsp.
  • Chili 3 pods
  • Black pepper 2 tsp.
  • Garlic 2 cloves
  • Spring onion 1 stalk
  • Soy sauce 1½ tbsp.
  • Shallots 3 bulbs
  • How to make O-Tao

    1. To start the dish taro is cut into cubes 7 mm. and steamed around 5 minutes. Chopped the spring onion and pestle chili for prepare to cook.
    2. Mix tapioca flour, rice flour, and water together and then put the boiled taro into mixed flour.
    3. You peel cloves of garlic and chopped it. After that heat vegetable oil in a large skillet over medium heat. Pour taro in mixed flour into hot skillet.
    4. Equalize flour and taro over the skillet, then add eggs and equalize eggs over flour. After flour below be cooked overleaf the flour.
    5. After 3 minutes, use a spatula to cut the flour into small pieces, add goat pepper and stir well. Equalize flour around edges of the skillet. Add the oil and heat up, add small oysters and fried.
    6. Fried until small oysters are dry. Then stir it together and add chopped garlic, chopped spring onion. Season the dish with soy sauce, some a little salt, and black pepper. Serve in a bowl.
    7. Chopped the shallots and fried it. After that sprinkle fried shallots on top, eat with pork cracking and bean sprout.
