Joseph Holbrook (January 16, 1806 – November 14, 1885) was a Mormon pioneer in the U.S. territory of Utah.

Holbrook was born in Florence, New York, and died in Bountiful, Utah Territory. Before Bountiful, Holbrook was in Clay County, Missouri, and was affected by the 1838 Mormon War. Holbrook used his wagon to transport one of the cornerstone of the Far West temple; the temple was never built and the four cornerstones remain in place in a park of sorts owned and managed by the LDS CHurch in Far West today. He was a member of Zion's Camp.
