In 2004, Eubank was invited for the first time by Philip Beale to participate in the international Borobudur Ship Expedition. As Expedition Artist, she traveled 10,000 miles with the replica 8th century Indonesian wooden boat from Indonesia to Seychelles, Madagascar, South Africa, and Ghana, painting and drawing. The boat was of a design based on stone relief carvings found on the ancient Buddhist temple at Borobudur on the island of Java. The body of work she produced during this voyage was subsequently presented at a solo exhibition held at Thompson's Gallery in central London.

Bali (2005)

In 2005, a group of five patrons sent Eubank to the island of Bali to create a series of 20 paintings. She was based in Ubud, for 3 months.

The Phoenician Ship Expedition (2010)

Eubank was an expedition artist for the Phoenician Ship Expedition, a re-creation of an all-wood 6th century BC Phoenician sailing vessel conceived by Philip Beale. This expedition is the second of two she has taken with Philip Beale. The Phoenician departed from Arwad, Syria in August 2008, sailed through the Suez Canal, around the Horn of Africa and down the east coast. The voyage continued up the west coast of Africa, through the Straights of Gibraltar and across the Mediterranean, returning to Syria in November 2010. In all the voyage will traveled 20,000 miles and was over 1 year at sea. Eubank's experience on the ship has been covered by publications such as the Los Angeles Times, LA Weekly and UCLA Magazine. Eubank participated in daily chores and maintenance of the ship, in addition to spending her days sketching and painting her impressions.
