Carlos Diaz is a fictional character in the ITV soap opera, Emmerdale, from 2000 to 2001 and again in 2004. He was played by Gary Turner.

2000-01
Carlos arrives in Emmerdale in March 2000 to begin work as a chef and immediately sets pulses racing.
Carlos is introduced to Nicola Blackstock (Nicola Wheeler) in early 2001 and the two soon start dating. Carlos proposes to Nicola when he thinks she's pregnant and she accepts, despite having an affair with Bernice Thomas (Samantha Giles), Nicola's half-sister. Bernice knows that Carlos is only with her because of the baby. When Bernice learns, on Nicola's hen night, that this is not true she is horrified and insists Nicola tell Carlos. Angry at her lies, Carlos tells Nicola about his relationship with Bernice and that she could be expecting his baby. Nicola reacts badly and attacks Carlos with her bouquet, before telling the congregation about the affair, stunning her father Rodney Blackstock (Patrick Mower) and Ashley. The wedding is cancelled and Carlos leaves the village after learning that his blood group is incompatible with baby Gabrielle's. Bernice and Ashley start rebuilding their relationship and a DNA test proves that he is baby Gabrielle's father.
2004
Carlos returns to the village, much to the shock of Nicola, who is now with fishmonger Simon Meredith (Dale Meeks). He soon learns that Bernice has left the village and initially decides to stay. However, he changes his mind and leaves in May 2004.
