Kabuto is a Japanese and sushi restaurant in Spring Valley's Tokyo Plaza. The restaurant was opened by Chef Gen Mizoguchi in 2012.

Menu
The menu consists of Omakase tasting menus, costing $48, $80 or $120 per person, not including tip, tax or drinks. The fish is imported from Japan's Tsukiji fish market daily and the menu changes each day based on quality and seasonality. Reservations for the 18 available seats are taken up to one month in advance.
Recognition
Kabuto was one of 50 restaurants nominated to be in the list of Bon Appétit's top ten new restaurants in the United States in 2012. In December 2012, Travel + Leisure ranked the restaurant among the 32 best sushi restaurants in the United States.
