Eucalyptus gypsophila, also known as the kopi mallee, is a mallee that is native to Western Australia and South Australia.

The tree typically grows to a height of 3 to 6 metres (10 to 20 ft) and has persistent rough bark toward the base of the tree.

It forms cream-white flowers followed by operculum conical-hemispheric fruit that are 6 to 10 millimetres (0.24 to 0.39 in) long.

E. gypsophila has a range extending from the Pilbara, through the Mid-West and into the Goldfields-Esperance regions and extending through into South Australia. It grows in red sand and clay soils near salt and playa lakes.
