Chicken inasal, commonly known as Inasal, is chicken marinated in a mixture of lime, pepper, vinegar and annato then grilled over hot coals while basted with the marinade. It is served with rice, vinegar (Sinamak or white vinegar) and soy sauce. A common dish in the Western Visayas region of the Philippines, it is a specialty in Bacolod City, Negros Occidental, as well as in neighboring cities and provinces.
