Hibernians
Cohen began his career with this boyhood team Hibernians, making the transformation from the youth squad to the senior squad during the 1999–2000. He made seven appearances in his debut season, scoring one goal, as Hibernians recorded a sixth-place finish in the Maltese Premier League.
The 2000–01 season, saw Cohen firmly establish himself in the Hibernians first team squad, he helped them to a fourth-place finish in the Maltese Premier League, making 19 appearances and scoring three goals.
Cohen's first success in the 2001–02 season. He was a key member of the Hibernians squad that won the Maltese Premier League title. Cohen went on to make 19 appearances and score four goals during that season.
Despite the success of the previous season, Cohen and Hibernians couldn’t emulate the same achievement during the 2002–03 season. The club went on to finish the season in fourth position in the Maltese Premier League, with Cohen making 17 appearances and scoring three goals.
The inclusion of Terence Scerri in the Hibernians first team for the 2003–04 season helped him to really start to show his attacking prowess. The pair started to play together regularly, which turned out to be the start of a devastating strike partnership. Hibernians went on to finish one place better than the previous season, in third position. Cohen made 23 appearances and scored seven goals during the season. Cohen’s good form had not gone unnoticed as he also received his first cap for Maltese national team during the season.
The 2004–05 season, saw Cohen burst onto the goal scoring scene, he helped Hibernians to another third-place finish in the Maltese Premier League, making 27 appearances and scoring 21 goals, finishing as the League's top scorer. Cohen also received the very prestigious award of the Maltese Player of the Year for the first time in his career.
Cohen's impressive form continued into the 2005–06 season, he helped Hibernians secure a fourth-place finish in the Maltese Premier League, making 26 appearances and scoring 14 goals. He also helped the club win the Maltese Cup, and Cohen was honoured again, as he scooped the Maltese Player of the Year award for the second consecutive season.
Cohen went into the 2006–07 season, and added to his medals collection, as Hibernians secured the Maltese Cup for the second consecutive season. On the domestic front, Hibernians finished in fifth position in the Maltese Premier League, with Cohen making 24 appearances and scoring eight goals.
The 2007–08 season turned out to be a very disappointing one for Hibernians, as the club finished the first phase of the season in the relegation pool, there was never any doubt the club would avoid relegation, and finished the season in seventh position. Cohen went on to make 23 appearances and score six goals. The club did however have one thing to shout about, as they won the Maltese Super Cup.
Hibernians went from one extreme to the other during the 2008–09 season. Under the guidance of new manager Mark Miller, the club shocked the critics and beat Valletta by two points to win the Maltese Premier League title. Cohen made 22 appearances and scored nine goals.
Cohen hoped to help Hibernians retain the Maltese Premier League title for the 2009–10, however the quest took some severe setbacks, as Hibernians sold the Maltese Player of the Year, Clayton Failla to Sliema Wanderers, and Cohen's strike partner, Terence Scerri joined Valletta. A new strike partner did replace Scerri at Hibernians in the shape of Etienne Barbara, who returned to the island after a spell playing in Germany. Barbara didn't stay with Hibernians long and moved to Carolina RailHawks in the United States, Cohen and Hibernians finished the season in disappointing fashion with a fifth-place finish. Cohen made 24 appearances and scored six goals.
Gżira United
On January 31, 2017, with the transfer window approaching closure, Cohen joined fellow Maltese Premier League side Gżira United on a free transfer, signing a two-and-a-half year deal.
The transfer bought down the curtain on a career at Hibernians that had spanned over 16 years playing in Paola, but with playing time becoming less frequent, Cohen made the move to help Gżira United in their battle against relegation. It was also suggested the Maroons completed the deal despite interest from fellow Maltese Premier League teams Sliema Wanderers and Hamrun Spartans.
