The American Meat Science Association (AMSA) is a non-profit Scientific Professional society for the advancement of meat science and technology. Founded in 1948 and formally incorporated in 1964, AMSA is headquartered in Champaign, Illinois. AMSA also has a significant student membership composed of undergraduate and graduate students of animal science and food science.

AMSA represents the scientific advancement of meat#Production, including animal welfare, slaughterhouse operations, meat biochemistry and microbiology, and food safety. They hold annual meetings (Reciprocal Meat Conference) with their last scheduled meeting taking place at Kansas State University in Manhattan, Kansas in June, 2011.
