The 2000 Cork Senior Hurling Championship was the 114th since its establishment in 1887. The first matches of the season were played in May and the championship ended on 8 October 2000. Blackrock went into the 2000 championship as defending champions, having won their 30th county title the previous year.

The championship culminated with the county final, held at Páirc Uí Chaoimh, Cork. The match was contested by Newtownshandrum and Erin's Own. Newtownshandrum the game by 0-14 to 0-11. It was their very first county title.
